Jamaican Style Jerk Chicken Recipe from the Jerk Hill restaurant in Hyattsville



Get Started:
Wash and dry 2 lbs of bone-in chicken: boneless chicken can be substituted if preferred.
Place chicken aside in glass bowl.

Ingredients:
2 Tablespoon of pimento (called allspice)
2 Tablespoon of fresh thyme
1 Tablespoon black pepper
1 Tablespoon ground ginger
1 Tablespoon ground garlic
2 Tablespoon salt
1 Tablespoon sugar
1 large onion, chopped finely
1/2 cup scallion, chopped finely
2 medium size scotch bonnet pepper, minced finely
1 cup vegetable oil
3/4 cup white vinegar
1 dash orange juice

Directions:
Combine all ingredients in a blender and blend till smooth. Pour mixture over chicken. For best results let sit overnight.



Grill slowly over fire. As the meat cooks, baste with marinade.
